A good question... for this particular sandwich today... it's best back non-smoked bacon (organic bred and fed pigs)... but we then hit a culinary conundrum...
because occasionally a smoked streaky bacon sandwich will be adequate (with lots of flavour too, but the streaky bacon IMHO has to be served crusty and cooked to perfection)

I'm afraid I was caught in action with slices of Cheddar placed in proximity to the Bacon, and it was vile.

I've never knew the term Northerner's Relish, a brilliant description... and as for mushrooms in the bacon sarnie... fuckin result... well sorted :wink:
(that means..."very good" to chaps of a Northern persuasion) poor old Evonx (Eric) stayed in a muslim hotel :shock: after the Manchester gig last tour... and they refused to serve bacon with his Full - English brekkie... :smt010
